Córdoba's fine dining scene has received international attention, centred on the extraordinary achievement of Noor, the restaurant opened by chef Paco Morales in 2016 that has since earned three Michelin stars — making it Spain's only triple-starred restaurant outside Madrid, Barcelona and the Basque Country. Noor's project is explicitly historical: each annual menu explores a specific period of Andalusian culinary history, reconstructing dishes of the Umayyad, Taifa and Nasrid courts using primary sources and modern culinary techniques in equal measure. The result is cooking that is simultaneously archaeological and avant-garde, presenting ingredients such as pigeon, quince, pomegranate, almond and saffron in combinations that feel both ancient and entirely new. Beyond Noor, Córdoba's gastronomic landscape includes Choco (Michelin-starred, focused on local produce with creative technique) and a generation of younger chefs opening ambitious restaurants far from the tourist centre. The common thread is a deep engagement with Córdoban agricultural tradition — olive oils, Montilla wines, Iberian meats, Sierra Morena honey — expressed through modern culinary intelligence.
