A brand-new Michelin star

In November 2025, the Michelin Guide 2026 awarded ReComiendo a star, recognising the work of chef Periko Ortega. Born in Jaén in 1980 and trained at Choco alongside Kisko García, Ortega opened his own restaurant in September 2014. In 2018 he moved to this address on Calle Mirto in the centro of Córdoba. Each plate draws on the chef's childhood memories, his grandmother's recipes, and the produce of inland Andalusia. The name "ReComiendo" is a pun — "to recommend" in Spanish, but also "I start again" — which announces a cuisine that rebuilds tradition rather than ignoring it.

Three menus

Recuerdos, Memoria, and Nostalgia: three tasting experiences running from 95 to 150 euros. Each unfolds a sequence from the Perikadas (the chef's surprise courses) to dessert. The mazamorra creativa — a modern take on one of Córdoba's oldest dishes — subverts expectation with precise technique. Artisan bread arrives alongside more than twenty Andalusian olive oils from family mills across the region; the dipping and comparing is built into the meal. Expect a reinvented salmorejo and dishes that invoke Córdoba's culinary history without being reverential about it.

The room

Small. Intimate. The atmosphere stays confidential. Service knows every dish by heart and tells the story of each — provenance, technique, intention — without lecturing. The cellar has a house fino viejo, patiently aged, alongside a focused selection of Montilla-Moriles matched to each course.

A dish that defines the approach

The mazamorra creativa is the clearest example of what Ortega does: he takes one of Córdoba's most ancient preparations — a cold almond cream that predates gazpacho — and rebuilds it with contemporary technique. The texture is lighter than the original, the temperature precisely calibrated, and a contrasting garnish (changing seasonally) introduces an element of surprise without undermining the dish's identity. It is not reinvention for its own sake. It is reinvention in service of the original idea.

Periko Ortega's Michelin star tasting menus fill up fast. The Recuerdos menu (longest, most creative) requires the most advance planning. The shorter Memoria and Nostalgia menus are slightly easier to book. Call or email directly rather than third-party platforms.
