The Mezquita is the obvious starting point — but after that, Córdoba has more going on than most visitors plan for. Night visits run Thursday to Saturday and feel completely different from daytime: quieter, lit from below, no tour groups pushing through. The Arab baths on Calle Caballerizas book up days in advance; go early. The better flamenco tablaos in the old centre run shows most evenings from 8pm. Medina Azahara, the 10th-century palace ruins 8km west, is half a day minimum — either the dedicated shuttle from the city or a hire car. Most other things, olive oil tastings and Guadalquivir cycle routes included, have same-day availability.
